Marou Faiseurs De Chocolat

When two French men, who found home in the beautiful and quaint country of Vietnam, comes together to incorporate an advocacy (develop agriculture and livelihood for the Vietnamese locals), a vision (to produce the purest dark chocolate), and a skill (French chocolate making) – A chocolate of excellent quality and distinct taste is born: Marou Faiseurs De Chocolat.



Vietnam is abundant with cacao beans. They have tapped small farmers/family of farmers - who have grown these beans from their own two hands- for the produce which gains its own character depending on the frequency of rains, the richness of the soil, the frequency of the rains, the climate of each terroir, and all other factors affecting the growth of the plant. The aim is to bring subtle accents of cacao in their range of single origin Vietnamese chocolates. And since these cacaos are grown in different parts of Vietnam such as in Mekong Delta, Central Highland, or on the slopes of the Annamitic Range, each bean have their distinctive flavors. 



Tien Giang 70%
A Full bodied chocolate with spicy, fruity notes, made from cacao organically grown by farmers of the Cho Gao Co-op in the Mekong Delta.

Ben Tre 78%
An intense yet balanced chocolate, from Ben Tre province in the Mekong Delta, where cacao tress are planted among coconut groves.



Dong Nai 72%
Their first ‘Pod-to-Bar’ chocolate, made with cacao elaborated in their own fermentation station near Cat Tien natural park; a finely balanced dark chocolate with hints of spice.

Lam Dong 74%
A rare and delicate chocolate made in micro-batches from cacao beans cultivated in hilly woodland at the edge of the Vietnamese Central Highlands between Madagui and Bao Loc.

Dark chocolates produce the same comforting effect as that of regular chocolates and there’s the added benefit of it being healthier for our bodies, the most important of which is its capacity to lower the risk of heart disease. 

The bittersweet flavor of pure dark chocolate, we must admit, is an acquired taste. If munching on pure dark chocolate is really something you can’t fathom doing, be creative and use it as an ingredient in baking, or better, in cooking. My sister and I prepared oil based mushroom pasta with Parmesan and added shreds of Dong Nai (which is great because it has hints of spice, perfect for food). We’re currently curating a brownie recipe using the chocolate (or what’s left of it) as an ingredient. This reminds me that I have to order more at PHDeli in Makati.
